Alan Philips and Jason Apfelbaum, who have been running pop-up dinners in parking lots and similar venues with their company, Guerrilla Culinary Brigade, are settling down. Late next week they plan to open Co-Op Food & Drink in the space that had been Thor in the Hotel on Rivington. “This is my first real restaurant,” Mr. Philips said, “but I haven’t given up on the pop-up dinners either.”
